When the holidays roll around, we want to give friends and family gifts that show how much we care. When I remember my childhood, I think of rolling cognac balls while watching Christmas movies. Now that I'm older, this is a go-to gift for the adults in my life who might enjoy this rich confection.
Ingredients:
1 & 1/2 c finely crushed Nilla wafers (store brand works just fine in this recipe)
1 c chopped pecans or walnuts
1 c powdered sugar + extra for dusting
2 T unsweetened Cocoa Powder
1 & 1/2 T Light Corn Syrup
1/4 c Brandy, Bourbon or Rum
Directions:
Mix all ingredients in a bowl (except for extra powdered sugar). Form into balls and roll lightly in palm of hand. Dust with extra powdered sugar. Store in an airtight container.
***NOTE - if you have a food processor, this is the time to use it. Put the whole Nilla wafers in and crush. Put crushed Nilla wafers in a bowl and then measure 1 & 1/2 c back into the food processor. Add remaining ingredients. Process until combined. Form into balls.
