A ragu made with beef short ribs braised in a red wine demi-glace made with red wine, beef stock, and seasonings. Served over gnocchi and topped with fried leeks. Accompanied by rosemary focaccia bread and a garden salad with tomatoes, cucumbers, and carrots with homemade basil balsamic dressing.
